How to open a kiosk selling ready-made donuts. Options for creating a business plan for the production of donuts

Finding a free place in the fast food niche and successfully succeeding in it today is not so easy, since many enterprising businessmen have long appreciated all the advantages of this direction. Nevertheless, the idea of donut production is still not very popular among them, the business plan of which will be useful to those who decide to undertake to revive the taste of childhood. This article looks at an example of a possible business implementation that you can adapt to your needs, but if necessary, you can turn to the experts for help and purchase a ready-made donut production business plan.

Business Features

A remarkable characteristic of food production is the short shelf life of products. It is especially pronounced in the example of donuts, which can only be sold when they are fresh and hot. Therefore, when planning the launch of such a production, it is necessary first to decide on the format that it will have:

  • selling donuts in a food court, shopping and entertainment center or a specialized cafe;
  • production of pastries on a stream with further sale to retail stores.

In the second case, it is important to find customers even before the launch of the production line. It will not be too difficult to do this, since, according to statistics, about 30% of stores are ready to sell goods of this order.

Company registration

The form of registration of the future company will depend entirely on the chosen direction of work. If the business plan for selling donuts covers individual trading in your own mini-cafe or food court, then it will be enough to issue an IP. If it is planned to sell through retail chains, then LLC will be the optimal registration form.

To open a business, you will need to prepare the following documents:

  1. Registered and agreed specifications for production.
  2. Technical instruction for the preparation of products.
  3. Recipe.
  4. SES conclusion.
  5. Fire department permit.

Due to the individual characteristics of the business, additional paperwork may be required.

Choice of room and location

For a manufacturing enterprise that does not plan to open its own retail outlet, a remote area of the city is also quite suitable, where you can profitably rent a suitable room. To accommodate the production line, about 120 square meters will be needed, of which about 40 will be occupied by the production tape.

A point that will be designed for the instant sale of manufactured products will look somewhat different. For her, you will have to find a place with good traffic or a large crowd of people. The main advantage of such a kiosk will be that the delicacy will be produced for a specific buyer, which completely eliminates the possibility of producing extra donuts.

Equipment

A business plan for the production of donuts should provide for the cost of purchasing equipment as the main expense item. In street trading, you can limit yourself to a conventional apparatus for the production of fragrant pastries. In general, the purchase list will look like this:

For an industrial scale, you will need to purchase a ready-made line, which usually includes:

  • automatic fryer;
  • system for loading blanks from dough;
  • filling dispenser;
  • conveyor for cooling;
  • dosing station for dough pieces;
  • nozzles for making donuts;
  • trolley;
  • baking trays.

In general, a line for making donuts can cost 2,240,000 rubles. Here it is also necessary to add a refrigerator (115 thousand rubles).

You can save on the purchase of packaging equipment, since the boxing can be done manually.

Range

Donut production technology is not too complicated and usually includes:

  • dough kneading;
  • filling preparation;
  • filling the product with stuffing;
  • roasting;
  • packaging.

At the same time, the assortment of a manufacturing enterprise may consist of the following products:

  • donuts "Berliner" (with and without filling);
  • donuts "Donuts" (with icing, with powdered sugar, without filling);
  • donuts "Kvarkini" (with and without filling);
  • "Apple snail";
  • "Kukhle";
  • Buns stuffed with apples.

Staff

A donut sales outlet can easily get by with two employees - one of them will cook the products, the other will sell them. But in order to launch a baking shop, it is necessary to hire the following staff:

  • technologist;
  • forwarder;
  • storekeeper;
  • workers.

It is better to develop a work schedule in shifts, which will allow you to start round-the-clock production. To establish sales, it will be useful to acquire an experienced sales manager who will maintain contacts with chain stores and look for private entrepreneurs who are ready to take products for sale.

Finance

To understand the holistic picture of the future enterprise, it would be quite logical to form a donut business plan with calculations. So, at the initial stage, to launch a small outlet, you will have to pay the following expense items:

  • purchase of equipment - 130 thousand rubles;
  • wages - 20 thousand rubles;
  • rent of premises - 30 thousand rubles;
  • purchase of raw materials - 55 thousand;
  • utility bills - 10 thousand rubles.

We calculate the revenue part based on the productivity of the shop in 800 donuts per shift. Even if we assume that the price of one donut is 10 rubles, and its cost is three rubles, we can conclude that the net profit per day will be 5600 rubles or 168 thousand per month.

Subtracting from this amount the cost of salaries and current purchases, we get 60 thousand rubles of net income, which is even quite good for a small company selling fast food.

Business from scratch. How to Write a Business Plan: Video

Business in the production and sale of food products will always be relevant, despite the crisis, the season, the financial condition of people. The need for food will never run out. Therefore, it makes sense to say that a business in the field of food production is a reliable and stable way to generate income.

Modern people are constantly in a hurry somewhere, and in this crazy rhythm of life there is not always room for a full meal. Most snack on the go, in fast food or a coffee shop. Therefore, in today's article, I want to talk about a profitable food business idea - donut production.

The modern fast food market is quite diverse, so that each client can find food to their liking. Even despite the harmfulness of fast food, almost every person is fond of it from time to time. The variety is really impressive, in every, even a small town, especially in the warm season, a lot of kvass, hot dogs, pizza, chebureks, pies, pastries and other goodies are opened. But in today's article, we will talk about a specific type of delicacy, which has already been forgotten in order. Donuts are products made from yeast dough with a sweet filling and icing. Each hostess prepares them differently, adding her own ingredients and experimenting with fillings. Therefore, this favorite delicacy comes from childhood, beckons us with its smell on the street and involuntarily makes us pay attention to the tent where these fresh, ruddy donuts are baked.

Donut Manufacturing Business Plan

If you like the idea of making money on donuts, then proceed with its implementation, having previously drawn up a detailed business plan. What is it for?

In the business plan for the production of donuts, you should calculate in detail all the costs of the project. In addition, it is necessary to study the demand and determine the level of competition. As for the demand for this type of food, there are a lot of donut lovers, so a business can be opened both in a big city and in a small city.

Stages of a business plan for the production of donuts:

  • Business idea analysis (demand, competition, profitability);
  • Collection of all necessary documents for registration of the selected type of activity;
  • Business format and purchase of the necessary equipment;
  • Premises rental;
  • Registration and hiring of employees;
  • Advertising as a way to attract customers (promotions, discounts, increasing the range);
  • Calculation of profit and payback period of business;
  • Further promotion (opening a network of cafes and confectioneries, stalls selling fast food).

Business Format

Donuts are a favorite treat for many children and adults. Fragrant, lush with a sweet filling, rolled in powder or glazed - they are in incredible demand at any time of the year.

Before proceeding with the implementation of the chosen business idea, you should decide on the format of the business. Naturally, opening a bakery will be more expensive than an ordinary stall on the street, even a beginner understands this. Therefore, there are two options - opening a mobile kiosk for the production and sale of donuts or selling fast food. The first option is suitable for novice entrepreneurs who do not have a lot of capital, those who dream. The second option is financially more expensive, requiring large investments (renting a room in a crowded place, staff, etc.).

Business registration

Before starting a donut business, you need to register your business. Control over food production is quite serious, so all the conditions in which food will be prepared must be met. You need to obtain permits from the sanitary and fire services, as well as from Rospotrebnadzor.

In addition, the following documents are required:

Agreed and registered technical specifications for production, hygienic conclusions of the sanitary and epidemiological station, technical instructions and approved recipes for the preparation of products.

For more information about the advantages and disadvantages of individual entrepreneurship and a limited liability company, see the diagram.

How to open a mobile donut shop?

Production and sale of donuts can be carried out in a mobile portable tent, which is desirable to install in the city center or in other crowded places with high traffic (park, hospital, hostel).

Having decided on the place, it is required to prepare and issue all permits and permits from the SES, the fire service, and Rospotrebnadzor. All you need is electricity and water.

Donut making equipment

You don't need any special equipment, all you need is a donut maker. At the initial stages, you can save money and not buy an expensive unit with high productivity, it is enough to make 15–20 donuts at a time.

The advantages of this option are that you can cook donuts (donuts) on order, and not sell ready-made ones. The smell and aroma of fresh pastries attracts buyers from afar.

But of course, as in any other type of business, this option of earning money has its drawbacks.

  • First, it's seasonal. Only in the warm season can you sell donuts in an open tent on the street.
  • Second, it's bad weather. Suppose, in the rain, frying donuts will be problematic, hot oil will sizzle and donuts may burn.
  • Thirdly, surplus production in the form of leftover dough. As a rule, donuts are made from yeast dough, which has a limited shelf life, so you have to throw out the leftovers.

But, despite all the disadvantages, this type of business is quite profitable and quickly pays off, so it makes sense to occupy a niche that is still underfilled.

Donut technology

As a rule, donuts are prepared from yeast dough, but there are other recipes. First you need to prepare the dough, then you should choose the filling (jam, chocolate), in the field of this you need to mold a donut and fry in a deep fryer on both sides until golden brown. Remove the finished donut, let the remaining oil drain and serve to the client, decorating with powder or icing.

Financial investments

  • Renting or buying a tent - from 1000 rubles;
  • Registration of documents and obtaining permits;
  • Acquisition of equipment for the production of donuts, the price of a new apparatus is from 20,000 rubles;
  • Furniture for a kiosk - from 5000 rubles;
  • Purchase of products from 10,000 rubles (at the initial stage);
  • Salary to the seller - from 25,000 rubles per month and above;
  • Other costs.

Thus, the minimum amount to open a business in the production of donuts is about 70-100 thousand rubles. The payback will depend on the number of donuts sold per day. Therefore, as noted above, choose crowded places to place your tent.

Customer acquisition

No special advertising is needed; it is enough to place a tent in a crowded place. The smell of freshly baked goods and a bright sign will help attract the attention of customers.

Range. It is advisable to constantly update the assortment, exclude the most unfortunate options from it and replenish it with new interesting options. After all, everyone has different tastes, they like sweet donuts with chocolate or jam, others with meat or mushrooms. You can cook several options to choose from, thereby attracting as many people as possible.

The aroma of baking always causes appetite even in a well-fed person. It is simply impossible to pass by. And if these pastries are also donuts, then the level of temptation just rolls over. A donut making business is a very profitable investment at minimal cost, and there are more than enough opportunities to implement this venture. Today we will consider a donut business plan, find out its profitability and approximate cost.

Donut shop options

Any donut shop can open in different formats. Let's take a look at some of the most relevant ones.

Organization of a miniature cafe

One option for selling donuts is to open your own mini cafeteria. The costs here, of course, will be somewhat higher, but customers will have the opportunity not only to have a tasty snack, but also to rest. When creating such a business format, special attention should be paid to the atmosphere: carefully consider the design of the room, musical accompaniment. You can choose any location, the main thing is that there is high traffic. Food courts in large shopping centers can be an excellent option, where there are a lot of visitors throughout the day.

Selling donuts through a van

A good option for selling sweets is selling from a van. So to speak, production "on wheels". A big advantage of such trade is mobility. You can “probe” potentially profitable places. For such work, you need a minimum of furniture, you do not need to think over the design of the institution (except perhaps only the “facade” of the van, and even that is not necessary).

The downside of opening a mobile outlet is that initially you have to tinker with paperwork related to obtaining permits and other nuances. But the income from such trade will quickly pay for itself. Later, we will consider how to open such a donut point.

Tray trading

An ideal option to start trading with limited starting capital. A minimum of equipment, space - and the outlet is open. Donuts in this case are sold exclusively in the "to go" format. As an additional assortment, tea, coffee, juices, water, etc. can be offered to customers.

Franchise trading

Franchising has many benefits, including:

  • Qualified assistance in production issues.
  • Assistance at the stage of company registration.
  • Equipped with a complete set of equipment.
  • Possibility of negotiations with the technologist and organization of staff training.

Ideal for those who do not particularly want to think about equipping the outlet, its assortment and advertising. On the other hand, when choosing a franchise business, you need to understand that all actions will have to be performed at the behest of the trademark owner, nothing of your own, at least without approval, cannot be brought.

Through vending machines

Now on sale you can find vending machines through which donuts are sold. The huge advantage of such a business is that it makes no sense to keep the seller, it is enough to install the unit in a crowded place and refuel it regularly.

Inside the machines, donuts are placed in special cassettes. When a customer orders, the selected number of "buns" passes through the microwave oven, where they are evenly heated. Further, the prepared products are delivered to the buyer. All this takes less than a minute.

Organizational matters

To open a donut trading business, you can register a regular IP. LLC in this case is impractical, there will be a lot of unnecessary paperwork. As taxation, consider PSN and STS (income minus expenses). Suitable OKVED:

Working with donuts is a full-fledged production of food products, and this indicates the need to obtain declarations of conformity (TU). This is done by certification centers. They can choose suitable and ready-made GOST and TU or offer their services in the development of new documents if the existing ones are not suitable. Such declarations of conformity are issued for a certain period, after which an extension is required. The cost and terms of issuance must be specified in a particular franchisor.

It is necessary to draw up recipes according to which donuts will be prepared, obtain permission from the veterinary service and access to work from the SES.

Selling donuts through vans

The main problem of business "on wheels" is that this area is practically not regulated from the standpoint of the law. Legislative acts either completely contradict each other, or make impossible demands. The basic document that determines the procedure for placing non-stationary outlets is government decree No. 772. It will also be useful to familiarize yourself with SP 2.3.6.1079-01. In the latter document, special attention should be paid to the content of paragraph 16, which refers to the need:

  • Provide a toilet for employees within a radius of no more than 100 m from the place of the outlet.
  • On an ongoing basis, comply with all sanitary and regulatory rules: conduct high-quality cleaning of the premises, etc.
  • Install containers for collecting garbage and take it out regularly.
  • Equip the van with the necessary equipment, including refrigerators for storing drinks and perishable products.
  • For serving dishes, use only plastic dishes and cutlery.
  • Ensure uninterrupted water supply, the quality of which will not be inferior to the central water supply.

To carry out trade through a van, despite the fact that donuts will also be cooked here, you need to talk in advance with the local branch of the SES, Rospotrebnadzor and the fire inspectorate. Find out what documents you need to prepare to obtain a permit. To place the van itself, you need to contact the local administration, which will give permission to use the free plot of land.

Purchase of equipment

For the production of donuts, there are a lot of units, from manual, designed for small volumes, to automated systems that can cover high demand. In a word, there are plenty to choose from. The price range is also wide.

For a small production of fresh donuts from the place you will need:

The cost of the device for the sale of donuts is an average of 200,000 rubles. The unit holds 96 donuts. You can start by installing one machine, and then, if everything goes well, gradually purchase additional machines and place them throughout the city.

If a small cafe or food island opens, where visitors can take a break, then the following equipment will have to be purchased in addition to the above:

Equipment Qty
(unit)
Unit price
(rub.)
Sum
(rub.)
coffee machine 1 30 000 30 000
Kettle-thermos 1 7 000 7 000
Blender 1 15 000 15 000
tables 5 15 000 75 000
Chairs 20 3 000 60 000
Dishes for customers (disposable) 10 000
Refrigerator for drinks 1 25 000 25 000
Thermal donut showcase 1 10 000 10 000
TOTAL 232 000

For trading and selling in a mobile way, you will need a special van or, much cheaper, a trading trailer. The first option, of course, is more convenient, but the cost of commercial trailers starts at 120,000 rubles, while car counters cost like full-fledged cars, or even more.

Premises for rent

Donut production workshop can be placed on an area of 50 square meters. m. Rent will be 100-150 thousand rubles. If you manufacture products away from the consumer, and sell donuts through vending machines, then you can save on production space. So, it will no longer matter at what point in the settlement the workshop will be located. The main thing is that his condition is acceptable and meets the standards of sanitation. Then the cost of the premises will be significantly lower.

Staff

Hiring of employees should be made after the format of work has been determined. An example staffing table looks like this:

Job title Quantity
Human
Wage
(rub.)
Total
(rub.)
Technologist 1 30 000 30 000
Forwarding driver 2 20 000 40 000
Baker 2 25 000 50 000
Salesman 2 18 000 36 000
TOTAL 156 000

If donuts are prepared and sold on the spot, then some positions can be combined, and some can be removed altogether. In this case, the driver will be useless, because it is much cheaper to use the services of transport companies as needed. This approach will reduce payroll costs by about 40,000 rubles, and the potential profit will be higher. However, it is worth remembering that one person cannot sell and cook donuts at the same time, this is contrary to sanitary standards. Therefore, it is impossible to combine the profession of a baker and a seller.

Accounting can be outsourced, or you can learn the basics of financial monitoring and do everything yourself. By the way, when organizing an IP and a simple taxation system (PSN and STS), there is nothing complicated about it, so it makes no sense to pay third parties.

We spend and earn

Let's summarize and calculate the approximate investments:

Of course, these are rough estimates. You can find out more accurate data by compiling a donut shop business plan with calculations for individual indicators, which will depend on the specific area, as well as the chosen business format.

On average, the cost of 1 donut is 3 rubles, and the cost of a package of 6 units is around 200 rubles (1 donut is about 33 rubles). Of course, pricing is regulated individually, but already from this difference, which gives a markup of 1000% (!), you can draw certain conclusions. The profitability of the business is very high.

Donut pros and cons

Of the minuses of the production and sale of donuts, one can only name that when you open it, you will have to tinker with papers and run around many instances. This is where the cons end. But on the positive side can be attributed:

  • No high competition.
  • Ease of manufacture.
  • High demand for products.
  • Relatively low cost of starting a business.
  • Fast return on investment.

Decide on the business format, make indicative calculations and boldly step on the path of your own business on donuts!

Eventually

Donut shop is a great fast food business that will allow you to make good money. A characteristic feature will be the ability to choose from several formats of work, from vending to a full-fledged cafe, the assortment of which will be based on fragrant donuts with many different fillings. It all depends on the initial capital and the hopes that you place on your project. Get started and you'll be fine!

In this material:

If you correctly think over a business plan for the production of donuts, then you can create a successful business that will bring a stable income. Donuts are fast food products that are often bought to have a snack on the go. Therefore, to organize such a business, large financial investments are not needed, because you can rent a stall to sell products. The production of donuts can bring profit up to 100%, which means that the invested funds will quickly return and even increase.

Registration and marketing authorization

To start making money on donuts, you need to obtain the appropriate permission and register your own business. It is recommended to register as an individual entrepreneur, because in this case, minimum taxes and requirements are provided. But if you plan to create a whole network of donut outlets, then it is better to collect documents for registering a legal entity and open a company like an LLC. This will provide more opportunities for developing your own business, for example, attracting investors or opening a cafe.

The next step will be obtaining permits from the SES and the fire service, whose representatives must conduct inspections in the premises where it is planned to produce and sell food. To get approval, you need to properly prepare the facility, ensuring proper working conditions, sanitation and safety. Cooking donuts is allowed only in enclosed spaces equipped with an exhaust hood, sewerage and water supply. Electrical appliances must be placed in accordance with established fire safety regulations.

Ways of doing business

The most important point of the business plan for the production of donuts is the way you run your own business, which will also determine the location of the point of sale.

You can start a business in the following ways:

  1. A stationary kiosk is the most common option for running your own business. Real estate can be rented, bought or built. The production of donuts can be carried out directly in the kiosk, if there is enough space in it to accommodate the equipment. Often, entrepreneurs use the facility only to sell products that are made at a mini-bakery or at home. To make a big profit, the kiosk should be located in busy areas of the city, for example, near markets, train stations, and educational institutions.
  2. Mobile kiosks are no less popular than stationary objects. They can also carry out only the sale of goods. The advantage of this option is the ability to move the kiosk around the city in order to find the most advantageous place. For example, in the morning and in the afternoon it is better to place an object near educational institutions and office centers, and in the evening - in a park or on the main square.
  3. A convenience store or coffee shop are the best options for starting a large food business that will generate huge profits. The property will be equipped with a kitchen and a sales area, so freshly cooked donuts will go on sale immediately. If you plan to open a cafe, then you need to install several tables and chairs in the hall and supplement the assortment of goods with hot and cold drinks.
  4. Selling donuts through partners is the least expensive way to do business, because. the entrepreneur will not need to independently organize a point of sale for products. Partners can be shops, private sellers, coffee shops, etc. The advantage of this method is the wholesale sale of delicacies and obtaining a guaranteed profit. But there is a downside: income will be slightly lower than in retail.

Furnishing the kitchen and point of sale

The main part of the initial expenses is for the purchase of equipment for preparing donuts. It should be noted that in order to obtain a good financial profit, it is necessary to prepare a large number of various products, therefore it is impossible to do without special devices that perform the following functions:

  • kneading dough in large quantities;
  • execution of blanks of the same shape and size;
  • filling with stuffing with a strictly observed dosage;
  • baking large batches of donuts;
  • glaze coating.

In addition to high performance, they significantly improve the quality of treats. In addition, the cooking process becomes less labor intensive and can be controlled by only 1-2 workers.

For individual production shops, it is better to choose large-sized equipment, the price of which can reach 300,000 rubles. But if the products will be prepared in a kiosk, then you should use mobile devices costing no more than 100,000 rubles.

As for the point of sale, for its arrangement you will need a showcase with shelving, a table, a chair, a microwave oven and consumables in the form of napkins, bags, etc. As a rule, products not sold by the end of the day do not remain in the kiosk, so a refrigerator is not needed in this case, but it must be for storing ingredients.

Business Profitability

The financial costs of the project will depend on the chosen way of doing business. For example, if you rent a room in which donuts will be cooked and sold, you will need approximately 180,000 rubles.

The food market is developing and growing more and more, new directions are emerging. Much comes from the West, as does the lucrative donut culture. How to open a donut shop from scratch? We will consider the donut manufacturing business in detail, having calculated the costs required to open it, determining the profitability of this business and choosing the best project management strategy in terms of optimality.

We analyze the market

Immediately analyze the market in your area. Now this delicacy is gaining its popularity, remaining a great option for a quick bite to eat on the road. Efficiency of preparation classifies donuts as fast food, and the main sales formats of the product are tied to this.

Most often, donut establishments already have some stock of ready-made dishes, but they also cook to order. Donuts are sweet, despite the variety of fillings.

And they are different: chocolate icing, chocolate pieces, powdered sugar, fruit icing, caramel and so on. Donuts are valued for their soft dough, moreover, they remain hot when sold. Do not forget that along with the main dishes, it is also important to sell drinks as well.

It remains to be added that it is worth opening this project with the expectation mainly of a children's and teenage audience, as well as young people, because adults and the elderly do not particularly recognize such delicacies.

Key features and benefits

When developing your own donut business, it is important to understand what features should be emphasized. Donut - and it is the efficiency of cooking that is an important feature.

In the pluses, you can bring the modernity and youth of the direction, use in the general concept of the institution modern fashion trends that are popular specifically with an audience of 30 years and below. Other advantages:

  • a huge number of ideas in terms of compiling the menu of the institution;
  • sufficient proximity to the buyer due to the average cost of one dish;
  • the possibility of opening an institution almost anywhere in the city;
  • rather low competition;
  • interest in the most effective money-making audience.

Choose the format of the institution

There are several formats in this direction, each of which has its pros and cons. Let's consider each:

  1. The donut stand is a standard donut shop, set apart from the rest of the buildings in a walkable area. Products are baked right on the spot to order, and fresh hot served in a special package to the buyer. Donuts are sold along with drinks, which will also have to be purchased in bulk. Some stall owners also buy delicacies from the workshops and sell them in the city.
  2. Kiosk on wheels - has the ability to move from one crowded place to another, analyzing profitability at different points and collecting the most profit. Do not forget that a mobile kiosk is a machine, albeit a non-standard one, and therefore you will have to spend extra money on its maintenance and fuel.
  3. Donut Cafe - is just a room in the building, divided into commercial and industrial areas. In the case of a cafe, not only donuts and drinks can be sold, but also similar pastries like cookies or gingerbread. This, by the way, will solve the problem with the rest of the dough, because cookies can be stored for a long time before they are sold.
  4. A workshop with the search for partners - you can make a delicacy without selling it at retail. If you find long-term cooperation in advance, then by preparing whole batches of products, you will be able to supply them in bulk to cafes and shops. The money will be spent exclusively on renting a workshop and purchasing the necessary equipment, as well as raw materials. But there is a risk of not finding partners.

There is also the option of buying a franchise - the right to open a business under someone else's brand. Franchising makes it possible to start with an already established reputation and a ready-made format of work, but at the same time you will have to follow the basic rules of the company.

Registering a project

To open a donut project, you need to collect documents and register the business officially. The production and sale of food products is the most controlled area of the business, so it is important to comply with all requirements and conditions.

First of all, you will have to register an individual entrepreneur or LLC. In the case of opening a kiosk, cafe or stall, a novice entrepreneur should stop at an individual entrepreneur - he will give all the necessary conditions for the sale of products.

Opening an LLC is more difficult, longer and more expensive, but it will allow you to open a project already on an industrial scale with the possibility of concluding agreements directly with legal entities. You will also have to switch to an LLC in case of expanding the business to a whole network. Among other things, the production of donuts requires obtaining special permits from Rospotrebnadzor, the fire service and the Sanitary and Epidemiological Station, which include the provision of:

  • premises and equipment agreed with the services;
  • developed technical instructions;
  • approved cooking recipe;
  • conclusions on hygiene from the SES.

Use advice from different authorities to avoid any problems in the future.

Choosing a site for production and sales

If you choose a standard donut stand, then you should find a crowded place, preferably near institutes or college campuses, or directly near the subway and inside parks.

A mobile kiosk, of course, has a nice bonus in the form of the ability to move around, but you should not use this opportunity too often, because the buyer needs to know exactly where your establishment is located.

If we are talking about a cafe, then it is definitely worth placing it on tourist routes in the city center. Of course, the rent is quite high, but the payback is much higher. You can try to locate inside business centers, but it is better for beginners to forget about shopping centers - there is too much competition and high costs.

Being engaged in the opening of a small industrial workshop, if possible, it is worth leaving the city altogether in order to reduce the rent for the premises. The main thing is that the transport hub is sufficiently developed. On average, you will need about 100-130 square meters for the installation of equipment and the location of utility rooms for workers.

We buy equipment

As in the previous paragraph, there is a direct dependence on the format. In the case of kiosks, you can limit yourself to purchasing mini-equipment, but for industrial sales, you will need an entire production line. In any case, you will have to think in advance what specific format your products will be: donuts or donuts.

The former often include round-shaped donuts, which are also often called Berliners, while donuts are donuts-rings. Also, purchases depend on the assortment you choose for the menu: you will probably need a icing machine and a filling machine. Basically, they buy the following equipment for the production of donuts:

  1. Donation machine.
  2. Industrial or conventional mixer.
  3. Form for blanks for Berliners.
  4. Cabinet for raising dough pieces.
  5. Fryer.
  6. Filling machine.

Obviously, the calculations will also have to include the purchase of disposable tableware for customers or packages for further sale in stores. In addition, the cafe will need to buy furniture for the trading floor, a counter and multiple racks, tables and cabinets for cooks, dishes and equipment necessary for cooks.

We buy raw materials for cooking

Finding a supplier of products is easy and it is possible to negotiate the supply of several products even with one organization. You will need to purchase the following ingredients:

  • flour;
  • vanillin;
  • yeast;
  • baking powder;
  • vegetable oil;
  • granulated sugar;
  • eggs;
  • milk;
  • glaze;
  • various fillers.

Some of the options on the menu will come with toppings, so it's worth calculating in advance how often each item will start selling and how much filling or topping you need.

Recruiting staff

In order to run a business correctly, it is necessary to enlist the support of several people, from which a staff, albeit small, will be formed. Depending on the size and format, more or less people will be needed. As a standard for a kiosk, a cook, a salesman and a foreman are recruited to take care of the equipment.

For a cafe, the minimum required is two chefs and two salesmen, a security guard and a technologist. In addition, you need a marketer, if possible an accountant. For the shop, you will have to take about six workers, a couple of foremen, shop and warehouse guards, and a driver.

The owner of the project should be the chief director, so that he periodically visits the enterprise to control the profitability of the business, the progress of work and the situation on the market.

We determine profitability

As an example, we will take a project that makes donuts in a separate workshop and sells them at 200 kilos per month in a standard kiosk in a large regional city, as well as delivering them to other organizations.

Expense line Amount of expenses, thousand rubles
1 Kiosk rental 30
2 Workshop space rental 50
3 Purchase of equipment and furniture 1 500
4 Public utilities 10
5 Paperwork 15
6 Kiosk staff salary 50
7 Workshop staff wages 100
8 Marketing Campaign 20
9 Purchase of raw materials for the preparation of donuts and drinks 60
10 Unexpected expenses 15
Total: 1 850

On average, a monthly sale of 200 kilos brings an income of 200 thousand rubles. Additional sale of drinks and delivery to shops or cafes will bring in a whole another 200 thousand. The net profit is about 150-170 thousand, which will allow the project to pay off in about a year.
