Coffeemania is a disease or habit from which you can benefit. Despite doctors warning about the dangers of coffee, its popularity is growing exponentially. This drink has already significantly pressed tea and juices, cocktails. So why turn a habit of people into a profitable business called coffee to go. How open a small coffee shop and how much it costs, we will tell below.

Why is it beneficial?

There are many factors that make takeaway coffee a promising business:

  • Business - occupies a small area up to 10 m 2.
  • To open a mini-coffee shop, you do not need to build anything or do major repairs.
  • The opening will require minimal investment in the purchase of equipment.
  • People without special qualifications can work in a mini-coffee shop.
  • Organizing takeaway coffee from scratch is easy without a franchise.
  • This is one of the few activities that does not require the launch of a powerful advertising campaign. The catchy themed exterior of coffee outlets and the aroma of the drink will attract customers.
  • Statistics - according to rough estimates, Muscovites leave several tens of thousands of dollars every day in establishments offering takeaway coffee.

But in order to organize this profitable business on your own, you will have to solve a number of problems related to the need to draw up documents, recruit conscientious staff, buy equipment, coffee itself and other accessories.

What documents need to be issued?

Takeaway coffee is a business that requires mandatory registration with the fiscal authorities - the tax office. If you plan to open several points, then it is better make your own IP. This will allow the newcomer to get comfortable in business, and most importantly, in the tax system. After a while, when expanding the business and turning it into a network, you can switch to another organizational form of ownership, for example, an LLC.

Step-by-step instructions for the procedure for collecting the necessary documentation and the registration procedure itself are contained on the official resource of the state tax authorities.

It is also necessary to obtain a permit from the Sanitary and Epidemiological Service, since take-out coffee belongs to activities related to public catering, therefore it is periodically subjected to profile checks.

Important! Getting permission does not mean protecting yourself from fines. It is necessary to keep the point of sale of coffee with you in absolute cleanliness. This will attract customers and help avoid penalties. According to the legislation, at least once a year, the Sanitary and Epidemiological Service will conduct inspections. It is also important that the opening of the business coincides with the completion of the permits.

If the area occupied by the business is rented, then permissions from the fire inspectorate and the territorial property management will not be required. But opening a coffee shop in your own building, building will require permits to be issued.

Only compliance with all bureaucratic procedures will allow you to relatively calmly conduct a takeaway coffee drink business. This is especially true for beginners who plan to start their own business from scratch. It is also necessary to buy and register a cash register if the organizational form of ownership has already grown into an LLC. Individual entrepreneurs have the right to work without it under certain conditions.

Places of trade

It is immediately necessary to understand why the idea of selling coffee to go is so popular. This is facilitated by the acceleration of the dynamics of the rhythm of people's lives. Many simply do not have enough time to sit in a cafe for a cup of coffee. Therefore, we have to solve this problem with the help of mini-bars that sell an invigorating drink in special dishes, from which it is convenient to drink on the go or being in a convenient, right place.

Accordingly, it is necessary to choose crowded places for installing outlets:

  • business centers;
  • supermarkets;
  • busy streets;
  • central parks
  • stations.

The design of the coffee to go point also plays a huge role. You can see the creative design options for coffee houses in the photo below:

Funds for business implementation - equipment and consumables

To save on capital construction, it is necessary to use modern technologies. Modular designs are perfect for installing outlets in indoor premises, business centers, supermarkets. They do not take up much space and, if necessary, can be easily moved to a new place. Opening, debugging their activities will not take much time and will not require significant resource costs.

For open-air trade, compact utility vehicles can be equipped. This idea makes the business mobile and allows you to respond as quickly as possible to the situation on the market - to move closer to the crowd of people. Opening a mobile coffee shop will require the purchase of cars, and vendors will need to have a driver's license. This is where the organizational and financial difficulties end.

Accordingly, you will need equipment. It is advisable to purchase professional samples. The leader in the production of coffee machines is Italy and Switzerland. The starting price of such equipment is 160,000 rubles. But its high level of quality will ensure the preparation of delicious coffee and long work without breakdowns.

Additionally, you need to buy shelves, bar stools and other trifles. The functional features of mini-coffee houses can be expanded by adding additional features to them when creating: shelves, departments, folding tables.

Separately, it is worth paying attention to the assortment, in addition to popular varieties and methods of making coffee, it is necessary to have several more rare and exotic recipes in service. Don't skimp on spices. This should be considered before opening pocket coffee shops. Also, do not forget about the cash register, each point should be equipped with it, if required by law.

According to calculations and forecasts, when organizing take-out coffee from scratch, the costs will pay off in 1–2 years. The profitability of the business is 40-50%.

On average, you need from $ 20,000 to organize the work of one takeaway coffee point using a car. If you want to open coffee with you in the shopping center, the costs will not exceed 500 thousand rubles. These figures may vary depending on the region where you plan to open a business, as well as the scale.

Recruitment

Before you open a business, you should take care of the staff. His selection must begin in advance. Staff - 50% of success. Friendly, polite, neat, sociable, he is able to level many shortcomings and attract customers.

Thanks to the modern rhythm of life, the popularity of the coffee to go service is constantly increasing. In medium and large cities of Russia today there are dozens (and in Moscow and hundreds) of small kiosks and mobile coffee shops on wheels selling an invigorating drink in thermocups.

Despite the fact that every day the number of businessmen offering coffee in this format is growing, there is no fierce competition between them. For the most part, this is due to the fact that this business began to emerge not so long ago, and therefore in every settlement there are still crowded places where it has not yet “reached”.

To create a highly profitable enterprise, it is necessary to draw up a competent business plan, which will cover organizational issues and calculations, analyze the market, consider risks and possible threats, and provide for unforeseen expenses. This applies to all business and other countries.

How to start a coffee to go business?

Many people are sure that organizing a takeaway coffee business project is easy. On the one hand, it is. True, there is one clarification - it is simple and easy to open a business only if you know how to do it right. Ignorance of all the subtleties and nuances can turn a profitable and promising project into a loss-making enterprise.

To prevent such a situation, you need to know where to start and what stages to pay more attention to. For example, first you need to determine the target audience. Confused by the question of who will buy coffee to go, the entrepreneur will be able to adjust the design, strategy, and business concept to the desires, interests, and needs of specific people - future customers.

The portrait of a potential client looks like this: a young or middle-aged person, a student or a worker, mobile, spending a lot of time on the street, who does not consider drinking a fragrant drink in a car or on the go to be something unnatural.

The business plan of this project provides for the following distribution of profits depending on the season:

Winter

Spring Summer

Autumn

33% 26% 13%

As you can see, there is a certain seasonality in this case, and it should be taken into account. For example, when planning to expand a business, you should not do this before the summer season.

Collection of documents and registration

A take-away coffee establishment must be registered; for this, a businessman should register as an individual entrepreneur or register an LLC. The first option is the most preferable because it saves time and money. You can register with your local tax office.

When choosing a taxation system, special attention should be paid to UTII. This option will allow you to pay less due to the small rented area and the lack of staff. On average, this tax will be about 3,000 rubles. In addition, for individual entrepreneurs working on UTII, a cash register is not required, which means that checks can be printed on a regular CPM.

The OKVED code for "take-away coffee" is 55.30 "Activities of restaurants and cafes". For a coffee house of this format, you do not need to obtain any permits, because there is no full-fledged kitchen in such an institution, which means that there is also nothing that supervisory authorities should check. All that an entrepreneur has to do is to notify Rospotrebnadzor of the launch of his activity. SES can swoop in with a check only if a complaint is received.

Investment amount

The organization of a take-away coffee outlet is a relevant business idea with little investment. To open a take-away coffee point, on average, the following amount of funds is required:

  • registration of an individual entrepreneur or LLC - 800 and 4000 rubles, respectively (state duty);
  • professional coffee machine - 150,000–300,000 rubles;
  • bar counter - 30,000–130,000 rubles;
  • cups - depending on the volume of the order and the size of the cup - 25,000–30,000 rubles.

According to the experience of businessmen who have opened their own coffee kiosks, you can meet 200,000 rubles, and the maximum amount of initial investment is unlikely to exceed 400,000 rubles. This difference in start-up capital is explained by the large savings opportunities.

Of course, the amount of money required to start will largely depend on the amount of costs required to open a trading kiosk. Firstly, this is rent, and secondly, the purchase of equipment, etc. You will also have to spend money on the design of a sales rack or a rented kiosk. When thinking over the appearance for a point of sale, one should be guided by the fact that it should attract and attract attention, arouse the desire to drink coffee.

Not every entrepreneur is able to lay out the required amount of money for the organization and promotion of his project. However, there are several ways in which you can find money to grow your business. One of them is (collective cooperation of people, built on the voluntary pooling of money or resources in order to support the efforts of other people or organizations). The second is to receive financial assistance from the state, for this, the future businessman must register with the employment service (as unemployed) and provide a salary certificate from his former place of work, draw up a detailed business plan and submit it to the commission for consideration.

Supplier selection

In parallel with organizing a business, it is worth considering the choice of suppliers. First of all, you should agree with the company that supplies coffee beans. If the client does not like the coffee, then write wasted. A delicious drink is one of the main conditions for business. There are many varieties of coffee. To understand the range and make the right choice will help the suppliers themselves and the analysis of competitors.

Buying your own coffee equipment makes the entrepreneur independent of a particular coffee supplier. The range of varieties sold is also not limited to strict limits and can be expanded at the discretion of the businessman.

The entrepreneur should find out if the variety he has chosen is suitable for traditional coffee drinks, since he will have to specialize in the usual cappuccino, latte, americano and espresso. The volume of the first purchase will depend on the conditions on which the contract with the supplier will be signed. Do not be afraid of numbers such as 10 kg or more. For a 200 ml glass, 9 g is required. coffee, for 400 ml - 18 gr. Consequently, 10 kg of the product will go to about 1100 small cups, and this despite the fact that a retail outlet with a good location can sell much more coffee per month.

Over time, when the work of the kiosk stabilizes, in addition to coffee, it will be possible to add an assortment of snacks (pastries, chocolates, sandwiches, etc.). It is unlikely to make money on them, because the margin for reselling other people's products is low.

Barista for coffee to go

An important component of the success of the outlet "coffee to go" is the professionalism and competence of the barista. Such an employee should not only prepare delicious coffee, but also build the right relationships with customers, have a polite conversation, and be able to resell, which will increase the average check. Finding and hiring the right worker can be difficult both at the stage of starting a production and at the beginning of work.

When launching a point of sale, entrepreneurs very often stand behind the counter themselves and engage in customer service, working many hours without breaks and weekends. However, the work "on two fronts" quickly drains, and over time, the owner will simply need a shift or a full-fledged barista. However, finding a professional is not easy. As a rule, young people who have no idea how to properly prepare coffee respond to the vacancy of a barista. Of course, you can hire a person without experience, but first you have to train him. It is possible that he will make mistakes that will lead to the loss of some regular customers. But the entrepreneur will be able to save on his wages.

Rent for "coffee to go" in the business center

The business project "coffee to go" is an ideal option for those who want to organize their business with minimal investment. However, to open a profitable and successful business, the point of sale should be located in a place with high traffic of people. When choosing a location, you need to consider that out of 100 people passing by the kiosk, 3 people are potential customers. Therefore, the more intense this flow, the more chances to earn good money.

The service "coffee to go" is aimed at people who are in a constant hurry, who do not have time to sit in a cozy cafe. Therefore, this offer is relevant for business centers and business districts. No less popular are places such as:

  • shopping and entertainment centers;
  • parks, squares, places adjacent to bus stops and metro stations;
  • railway station territories, higher educational institutions.

Advice: when choosing a place for a future outlet, it is necessary to take into account the activities of competitors. These include not only mobile coffee shops, but also large popular cafeterias that offer not only drinks, but also sweets, snacks, etc.

If you are going to open "coffee to go" in a business center, you should give preference to a place located near the entrance-exit, or where there is a large crowd of people. The cross-country zone will have to be determined independently.

Professional coffee machines for takeaway coffee

For a point of sale to bring a good profit, the quality of coffee must be high. This is the main condition for successful sales. A cafe of this format will require a professional coffee machine (of course, super-automatic equipment will also cope with this work, but the cost of such equipment is comparable to the budget of a mobile coffee shop).

To work with a high-quality drink, you will need a seller who knows how to prepare coffee on a traditional coffee machine, as well as having experience in setting up and maintaining this equipment.

The most suitable option for take-away coffee is a two-group coffee machine with two milk frothers. The equipment must have a boiler with a volume of 7-8 liters. A smaller machine will not be suitable for a high level of coffee performance. The dimensions of this technique, as a rule, are standard: 800 * 650 * 450 mm. When planning the arrangement of a place for installing equipment in a kiosk, it is necessary to take into account the size of the machine and coffee grinder, which requires a separate space. A complete set of such equipment consumes an average of 4-4.5 kW of electricity.

When installing coffee equipment in a mobile coffee-to-go kiosk, you should equip the car with 220 W of electricity and a daily supply of drinking water. In some cases, with limited opportunities, when there is no running water and there are restrictions on the use of electricity, capsule equipment and coffee capsules can be used. The cost of coffee in capsules is higher than that of coffee beans, but this does not affect the profit in any way.

Purchasing equipment is the most expensive part of a business plan. Among the brands of coffee equipment, it is worth highlighting the following manufacturers:

  • Egro 70 Series;
  • Nuova Simonelli;
  • Saeco;
  • artic;

High-quality foreign equipment is very expensive (150-250 thousand rubles or more). However, if a businessman does not have the required amount, the rental of equipment or the purchase of used coffee machines comes to the rescue.

Sometimes coffee equipment is rented or provided free of charge by bean suppliers, subject to the purchase of a certain amount of coffee from them. They also advise on the acquisition of the necessary equipment, depending on the planned scope of work, carry out repairs and maintenance of equipment.

Franchise Benefits

Any entrepreneurial idea, be it coffee to go, is associated with risks. For a novice businessman, the best solution that can reduce losses to a minimum would be to organize a business with a franchise of a well-known brand. This approach will cost an entrepreneur much cheaper than starting a business from scratch (some brand networks offer service packages starting at 60,000 rubles).

If a businessman purchases this package, then in return he receives assistance in obtaining the required permits, registering an establishment, and purchasing the necessary raw materials and equipment. In addition, the entrepreneur enlists the support of the franchisor in matters related to doing business. To choose the most suitable offer, it is recommended to familiarize yourself with the catalog.

"Coffee to go" as a business - reviews

Those who decide to use the idea of "coffee to go" to organize a business should be guided by the feedback of those who already had experience in conducting such activities. To date, reviews about it are predominantly positive, because this service brings a stable income and, as practice shows, has development prospects.

The popularity of establishments of this format began to grow as soon as such a service from McDonald's became available to Russians, over time, other retail chains began to put forward this offer. Today, you can buy a glass of an invigorating drink in almost every street kiosk, pavilion or.

In contact with

Ruslan Mitrofanov from Vladimir told us how he decided to buy, why he chose Take and Wake, and how the construction experience helped him in his work.

Ruslan Mitrofanov is a partner at Take and Wake in Vladimir

- a network of coffee shops in the format of coffee to go. Open points in shopping and business centers, street kiosks. They brew coffee from their own roasted beans, which are imported from Brazil, Ethiopia, Kenya and Rwanda. In addition to the classics, there are 14 signature drinks on the menu. Promotions and discounts are regularly held, seasonal offers are valid. The client can order and pay for a drink through the company's mobile application, which is suitable for iOS and Android.

The owner of the network, Konstantin Kuzminykh, opened the first outlet in 2014 in Moscow. Since 2015, the company has been selling a franchise. As of the end of 2017, the Take and Wake chain operates 23 coffee shops throughout Russia and sold 1 million cups of coffee. The company's goal is to open 1,000 coffee shops in 5 years.

Own business

The Take and Wake coffee house is not the first business of Ruslan Mitrofanov. Since 2014, Ruslan, together with his friends, has been running a construction company. They specialize in industrial mountaineering - they repair the facades and roofs of houses, install and wash windows, conduct electricity and other communications.

The idea to open such a business came to Ruslan when he worked in a similar company as an assistant to the head. There he studied the field and gained experience. Everything suited, except for the position. Ruslan was generally bad at working for hire. He constantly saw the shortcomings of his leaders and did not hesitate to tell them about it. The leaders did not accept criticism and fired Ruslan. He had to look for a new place, but even there history repeated itself.

Ruslan's main business is working at height

Ruslan likes mountain climbing. For three years of work, his company has become famous in the Vladimir region. There are always orders, the plan is being fulfilled, profits are coming in. But Ruslan does not want to develop beyond the borders of his native region, he simply does not have such a desire, he already has enough.

Ruslan sees only one problem in the construction industry - seasonality. If during the summer it turns out to earn a lot, then in the winter this money simply goes to ordinary needs. In 2015, when his company was already a year old, Ruslan decided that it was time for him to open a second business. One that will generate income all year round.

Own coffee shop

Ruslan and his wife Daria are very fond of drinking coffee and are well versed in it. “I can tell good coffee from bad coffee,” says Ruslan. He was not satisfied with the quality of the drink in any institution in his city - sometimes too bitter, sometimes the aftertaste is unpleasant. So the Mitrofanovs had a dream of their own coffee shop.

Drawing attention to the prices of the drink in establishments and its cost, Ruslan came to the conclusion that the coffee business has a high margin, which means it should be profitable. I began to study the franchise market in this area. Ruslan was not going to open a coffee shop from scratch - there is too much to know and be able to do, and it will not work to combine it with the main business.

Ruslan found on the Internet. I read it - I liked it. Firstly, the philosophy of the company was close to Ruslan in spirit. And secondly, the price was right. If most coffee-to-go franchises at that time were sold for 250-300 thousand rubles, then Take and Wake offered their package for only 80 thousand. Ruslan called Konstantin, asked a few questions, received answers and began to think.

I thought six months. While thinking, followed the development of the company. When in May 2016 Ruslan discovered that the Take and Wake network of three points had grown to 20, and the entry fee had risen in price to 100 thousand rubles, he understood that he had to act. I called Konstantin again, arranged a personal meeting, and went to Moscow. And he liked the person, and the company, and most importantly - coffee. I signed a contract, paid a lump-sum fee, received a franchise package with instructions and went home to open a coffee shop.

Take and Wake franchisee training system - lessons with mandatory homework

Beginning of work

First of all, Ruslan dealt with organizational issues - agreements, permits, registration of forms of activity. There were no problems here - after all, Ruslan did not open a business for the first time and knew where to go and what to do. Yes, and the franchisor helped to resolve all issues with lawyers or accountants, collect documents. The problems started later.

Finding a place

Ruslan did not manage to find and rent a room for a coffee shop right away. Vladimir is a small city with only 350,000 people. In the very center of the city, where there are a lot of walkers and tourists, all the places are already occupied and the rental prices are too high.

To help Ruslan solve the problem, Take and Wake's head office conducted an analysis of the territory and offered several options. Of these, Ruslan chose a room next to a large business center, not in the very center of the city, but next to it - a three-minute walk from the Golden Gate. Tourists go there, but the main part of the visitors are employees of the business center.

It was disturbing that a tent with coffee was already working nearby. But Ruslan opened his establishment in a different format, so he decided to take a chance - to make a coffee house better than that of competitors and lure their visitors to him. The place was approved.

The landlord was good. He not only did not ask for a deposit and an advance payment, but also gave a 20-day delay. As a result, Ruslan paid 30 thousand rubles for a month of rent. Every month, utility bills are added to this amount, it comes out to about 40 thousand.

Repair

On this joy from the premises ended - his condition was terrible. The walls were sheathed with plasterboard and covered with wallpaper 15 years ago, the electrics and plumbing worked somehow. A major overhaul was needed.

Ruslan spent 360,000 rubles on repairs and all 20 days of the lease deferment. It would have turned out more, but experience in construction helped. Ruslan did everything himself - demolished and rebuilt the walls, installed new doors, replaced the electrics and plumbing.

Even despite the savings, the preparation of the premises almost doubled Ruslan's budget. There was not enough money, I had to borrow from friends.

Friends helped, but the problems did not end there. Ruslan spent 150 thousand rubles on furniture. I ordered a bar counter from local craftsmen, but they did not complete the order on time. The opening day had already been appointed, and Ruslan was afraid that he would not make it in time. Therefore, the installation of the rack was taken up as soon as it was brought.

The sign was also installed at the last moment - three days before the opening.

Despite the fact that he had to work very quickly, Ruslan tried to do everything efficiently. At Take and Wake's headquarters, a design project was developed for him. Ruslan did everything possible so that his establishment did not differ in any way from the picture.

Equipment and consumables

When the problems with the repair and arrangement of furniture were resolved, it was time to buy equipment and supplies. On the recommendation of the main office, Ruslan purchased a Carboma freezer, a refrigerator, a toaster and a grill. I spent 60 thousand rubles on everything.

Ruslan rented a Simonelli coffee machine and a Fiorenzato coffee grinder from the main office for free. Its essence is that if you buy coffee and other consumables from the franchisor's suppliers, then the equipment is just given. And if you want to work with other dealers, the equipment will have to be returned or redeemed.

The suppliers of Take and Wake arranged for Ruslan, but the coffee machine did not. More precisely, not immediately. At first he was greedy and took a two-group, but it turned out that it was too big and would not fit on the counter. I had to go back to Moscow and change the coffee machine to a one-group one.

Ruslan also brought consumables from the Moscow office. I spent 60 thousand rubles on coffee, milk, syrups, cups, pitchers, holders and other trifles.

Staff

To save time, Ruslan started looking for employees for the coffee shop even before the renovation was completed. 30 people responded to a vacancy for a barista with a schedule of 2/2 and a salary of 25 thousand rubles in three days. Ruslan chose two and signed them up for training. Instructions for recruiting and motivating staff were given at Take and Wake's main office.

As a rule, employees are trained there - in their own barista school. But a specialist from the main office, Denis Kuzminykh, came to Ruslan's point on his own. For three days, he taught future baristas how to make delicious coffee and shared signature recipes. As a result of the training, the guys received certificates.

In addition to following the franchisor's recommendations, Ruslan took the initiative. A friend who does social media marketing suggested that he create an Instagram account for the coffee shop so that people would know about it even before it opens. So Ruslan did. Every day I posted news and photo reports there, wrote about problems, boasted of achievements. Instagrammers liked this initiative. In a year, almost 3,000 people subscribed to Ruslan's coffee shop account.

Clients

Ruslan believes that the main secret of success is to know your customers. Even before the opening, specialists from Take and Wake's main office helped him analyze the city, understand with whom and how best to work.

Ruslan decided to work with everyone. If, in general, a typical visitor in the network is a student, a young man under 35, then Ruslan often gathers women over 40, employees of the nearest business center, and managers. Regular visitors receive discount cards, and there are special offers for BC employees.

To make customers feel comfortable, Wi-Fi is available in the coffee shop, and each table has a socket. Soft music plays for atmosphere.

Expectations and reality

Comparing the expectations of buying a franchise with the reality of launching a coffee shop, Ruslan says that things didn't work out as planned. He expected to meet 400 thousand rubles, but spent 700 thousand.

Everything was clear on the franchisor's side, he was helped to resolve issues, gave instructions, but still some unplanned difficulties and expenses constantly arose. The repair of the premises alone exceeded Ruslan's budget twice.

Profit also had to wait longer than we would like. The coffee house reached the payback in two months, and the investments were completely repulsed only after seven. He thought it would be faster. For himself, Ruslan explained the extended terms by the fact that the institution opened in the winter. Most visitors come to Take and Wake for coffee to go, and winter is not the best time for festivities, Ruslan believes. In his opinion, the best time to open is summer or autumn.

Expenses and income

Expenses
Lump sum 80 000 ₽
Royalty 3% of revenue, but not less than 3,000 ₽
Legal registration 30 000 ₽
Rent 40 000 ₽ per month
Premises renovation 360 000 ₽
Furniture 150 000 ₽
Equipment 60 000 ₽
Consumables 60 000 ₽
Taxes, accounting and banking services 30 000 ₽
Salary of two employees 50 000 ₽
Income
Average check 150 ₽
Net profit 70 000-80 000 ₽ per month

Future plans

Ruslan is happy with the coffee shop, but still finds problems. After a year of work, he realized that it was time to look for administrators who would deal with the turnover and ensure that everything worked properly. Now employees call Ruslan for every little thing, he has to constantly come and repair or buy something. I would like to delegate the routine to someone else.

collapse

This type of mini-business, like "coffee to go" is considered a quick payback not troublesome business. Many people use vending machines, and some of them would love to drink natural freshly brewed coffee.

Opening a successful coffee shop is not easy, for this you need to love your job and be well versed in the varieties of the drink. The barista prepares natural coffee, it is served to the customer in a disposable plastic cup. This allows everyone to take it to go, step away from the counter and enjoy the aroma of coffee anywhere. Hence the name of the business.

It doesn’t take much to start a takeaway coffee business. The main costs include renting a room, paying for electricity and labor of employees, purchasing a coffee grinder, a coffee machine, products for making a drink.

Premises for rent

Before you rent a business space, look at how many people pass at a given place per hour, and how many cars are parked. To open a coffee shop with takeaway coffee, you need to carefully consider and plan all the details of the business in detail.

It is better to rent a small plot for a coffee shop in a crowded place, most often these are shopping and entertainment centers, business centers, universities and other crowded establishments. You can rent an area from 2 m2. The outlet can be placed both outdoors and indoors. The price for renting 1 square meter of premises may vary depending on the location.

Registering a business

To register a mini-coffee shop, it is enough to issue an IP. In addition to registering a business, in the tax office, you must obtain permission from the SES.

A coffee shop is a catering establishment, so it must meet all the standards and norms of the SES. The OKVED code for this business is 55.30 “Activities of restaurants and cafes”.

Models with a built-in refrigerator for milk are considered more convenient. When choosing a coffee machine, it is better to seek help from an experienced person or ask a practicing barista for an opinion. This will help you avoid unnecessary expenses.

It is necessary to consider professional-level coffee machines that are designed for heavy loads. Many prefer professional Italian technology. Dealers provide customers with a complete set of equipment, including all necessary accessories and tools. They can also deliver you cups, lids, and other branded accessories necessary for the outlet.

In order to open a mini coffee business, there is absolutely no need to purchase complex machines with a large set of automatic functions. Your task is to make the cost of brewed coffee lower, this can be achieved by saving electricity. All products used, except milk, are stored for a long time and do not cause trouble.

A good coffee machine allows you to quickly and efficiently serve customers. It should work without interruption and not fail with frequent breakdowns. Most often, entrepreneurs prefer foreign equipment with a cost of 150-250 thousand rubles. If there are no such funds, equipment can be rented from coffee suppliers, having previously concluded an agreement with them for the permanent purchase of a drink.

To prepare coffee to go, bottled water and disposable utensils are used. From communications, an electrical network is required.

Recruitment

The coffee-to-go bar counter occupies a small area, one person can work there, but two people need to be involved to organize shift and daily work. Employees must undergo a medical examination and have a medical book.

Using a coffee machine is not possible without a professional barista. Simply put, as a business owner, you need to be a master and knowledgeable drink maker. A good coffee shop is not only a good location, quality coffee and equipment. In addition, one must have the talent to prepare a drink. The barista must help the customer choose the coffee.

The target audience

Demand for specialty coffees is growing every day and there are great opportunities for new coffee establishments. To find a good place for a coffee shop, you need to make a lot of effort, show patience and perseverance. Renting a place may depend on the concept of the business, one of the factors is the right target audience. The service is more often used by students and passengers at railway stations and bus stations.

Potential clients may be lower-level managers, young professionals. Due to high employment, these people need fast and high-quality service.

If the drink is made from freshly ground and aromatic coffee beans and has an unforgettable taste, you can achieve great success and you will have regular customers.

Investment size

About 120 cups of drink can be prepared from one kilogram of coffee. At the same time, 50 ml of water is consumed per cup. In addition, you need to buy sugar, milk, cups, spoons and napkins.

In places with high traffic of people, to prepare a drink, a lot of money must be invested in the purchase of products. If you brew 4,500 cups a day, then you need to spend 75,000 rubles just to buy 37.5 kg of coffee.

Do not think that investments in such a mini-business will quickly pay off. The average monthly profit from one point will be approximately 80 thousand rubles, and with a fairly attractive range of related offers (buns, croissants, waffles), the profit can reach up to 140 thousand per month.

Despite the fact that the price of the finished drink is 30-40% higher than the cost, the profitability is only 20%. Most of the funds are spent on renting the place of sale.

Coffee shop franchise "Coffee to go"

A franchise provides an opportunity to purchase a ready-made mini-business with a well-advertised and universally recognized product. Despite the large investment (1800 euros) for the purchase of the package, you get the opportunity to trade with a recognizable brand, get the best equipment and the opportunity to recoup your business in about two months. This is a great option for beginner businessmen who have little idea of the nuances of work. Thanks to the ready-made business organization structure, consultations from the franchisor, you can easily get up to speed and recoup the investment in the first months of work.

Pricing

In order for the business not to burn out, it is necessary to carefully calculate the prices for the finished drink. How many cappuccinos, lattes or espressos do you need to sell to break even and pay your rent? There is a holy business axiom that allows you to adjust the prices of your products.

If everyone complains about the high prices - they are not too high, if no one complains - they are too low, if only a few people complain - the prices are optimal. If your costs go up, prices must go up. And, if your products are exceptional, customers won't complain about price increases.

For the success of the coffee-to-go mini-business, study the experience of your competitors, make sure that you are always ahead.

How to open a takeaway coffee shop. Business plan: everything from site selection to payback

More and more people drink coffee, and few people are surprised by a take-away coffee kiosk. But a culture of drink consumption has appeared: now people prefer to drink coffee outside the home and sometimes pay a lot of money for a cup.

Most city dwellers constantly do not have enough time and do not always have the opportunity to visit gourmet coffee shops with good coffee. Therefore, a business model such as “coffee to go” or “coffee to go” has appeared, which allows people to quickly buy their favorite drink for little money.

“Coffee to go” and, in general, selling coffee is a highly profitable business, especially if you have more than one outlet. Today, the assortment of coffee is very wide, and thanks to competition, wholesale suppliers offer good prices and favorable conditions for different sales volumes.

The price of coffee beans, such as 100% Arabica, from trusted suppliers is an average of 400 UAH (1000 rubles) per kilogram. For one cup of Americano, you need about 7 grams of coffee - as a result, the cost is about 3 UAH (8 rubles) per cup, and they sell it at coffee to go points at a price of 15-20 UAH (45-60 rubles)! (The data is based on anonymous statistics of the Poster POS automation system for the cities of Russia and Ukraine.)

Coffee to go franchise or your own business model?

There are two ways to open such a business: independently or through a franchise. Depending on the choice of the franchisor, the finished project will cost UAH 70,000–200,000 (150,000–500,000 rubles).

Franchises for Ukraine:

Franchises for Russia:

The franchise package usually includes a ready-made brand book, point design and well-established promotion schemes, as well as its suppliers, technological cards and own drink recipes, business organization and accounting system consulting, perhaps even a general customer base and loyalty system. Some offer additional training for your staff at working coffee outlets as a bonus.

Of course, the availability of such services from the franchisor depends on the selected package and the terms of the contract. But in any case, in addition to acquiring a franchise, you will have to spend money and time on registering a business, purchasing equipment, initial investments in the first month of operation and working capital.

But you can save on buying a franchise, spend time searching for the necessary information and do everything yourself, having thought through your business model. This approach will take more time and effort, but you can invest more money in equipment or renting a good place. To help you in this difficult task, we have tried to cover all the most important points of the checklist for a novice owner of a coffee pot in this article.

Choosing a place for coffee

One of the most important points when opening a takeaway coffee shop is choosing a location. When calculating the patency of a place, it should be taken into account that approximately 3 people out of 100 are your potential customers. The greater the flow of people, the higher the revenue, the profitability of the institution and, consequently, the return on initial investment.

The most "fishy" places:

    pedestrian crossings;

    subway entrances;

    public transport stops;

    parks, squares, embankments;

    areas near educational institutions (universities, colleges, etc.);

    shopping centers and large pavilions;

    airports, train stations.

To maintain a high turnover of your coffee pot, you need to constantly monitor the dynamics of parameters such as number of checks And .

The number of checks depends on the patency of the place and the correct definition of the target audience. Even despite the high traffic, there may simply not be your potential customers among people.

What documents are needed to open coffee to go

Registration of sole proprietorship (Ukraine), individual entrepreneur (Russia) or LLC

Registration of FLP (IP) is much cheaper, faster and requires the collection of fewer documents. When registering with the tax office, you need to classify your type of economic activity as “food retail”. You must also obtain permission to open a point from the sanitary and epidemiological service, territorial property management authorities and the fire inspectorate.

The entire registration process takes an average of 3 to 4 weeks. If you do not want to solve these issues on your own, you can entrust all the work to a company that collects and prepares documents. It usually takes no more than a week and costs about 2,000 UAH (5,000 rubles).

If you plan to open a coffee shop on the territory of a shopping center, then it will be a little easier for you: you do not need to obtain permission from the fire department and other services. Shopping and business centers have almost all the necessary permits, except for the sanitary and epidemiological station.

Equipment for coffee to go

The most important equipment that you need to buy for a takeaway coffee shop is a coffee machine. The volume of the tank must be at least 8 liters, and the power must be up to 5 kW (this must be taken into account when calculating energy consumption). A smaller coffee machine simply won't be suitable for the required speed and volume of coffee preparation.

For quick work and instructing beginner baristas, it is better to consider devices with a minimum set of necessary functions. The fewer additional features, the cheaper and easier the repair of equipment. However, setting up any professional equipment takes a lot of time, and you will also need an experienced person to supervise coffee preparation during start-up and debugging.

Buying equipment for a coffee shop is the most expensive part of a business plan. It is best to trust manufacturers whose dealers and service centers are located in almost all regions: Saeco, Egro 70 Series, Settanta, Nuova Simonelli, CMA, Arctic.

High-quality foreign equipment is very expensive: UAH 60,000–100,000 (150,000–250,000 rubles) or more. But you can always consider the option of buying a used coffee machine and coffee grinder, which will be almost 2 times cheaper. You can also rent coffee equipment or even free of charge from coffee suppliers - subject to the conclusion of an agreement for the purchase of a certain amount of coffee within a year or several years. In addition, they can advise on the purchase of necessary equipment depending on the volume of coffee preparation and quite often help with the repair and maintenance of coffee equipment.

Don't forget about sales stand costs, the design of a rented island or kiosk and various little things that are also important for the comfortable operation of the point without overlays:

    consumables for coffee drinks (milk, toppings and syrups);

    snacks, sweets, snacks;

    disposable cups, lids, spoons;

    bar inventory.

coffee shop menu

The menu in small coffee shops without tables, as a rule, is limited to only a coffee card, if you do not have imported cakes, chocolate or other sweets in your assortment. Coffee and drinks based on it - depending on the season. Sale of coffee provides from 80% of all revenue, the rest is related products, most often various desserts.

To diversify the menu, add positions that not only differ in the way they are prepared (latte, espresso, cappuccino, etc.), but also types and varieties of coffee that will distinguish the drinks in taste. Now it is not enough to present only one type of coffee - in order to stand out from the competition, you need to offer an exclusive in the form of a unique variety or a mixture of different varieties. Don't forget the toppings and spices!

And most importantly - do not be too lazy to arrange a stand for the sale of roasted coffee by weight in branded packages - this is real will increase your average check.

What you need to open coffee to go - the choice of supplier

The quality of the coffee is the most important factor when choosing a supplier. Be sure to check all certificates for products and production and the conclusions of the sanitary and epidemiological examination. You can read more about choosing a supplier in, in which she answered all the most important questions about choosing coffee suppliers and working with them Irina Uskova, CEO of the Coffee Molly business coffee chain.

Coffee shop staff

The job of a barista is often viewed as temporary. To avoid turnover, you need to think. Most baristas are paid by the hour. According to trud.com, the average salary of a barista in Ukraine is UAH 5,000–6,000, depending on the city; in million-plus cities they are naturally larger, and in the capital they are the highest. In Russia, salaries are slightly higher, but also differ significantly from region to region - on average, from 25,000 to 35,000 rubles. Usually the shift lasts 10 hours, but if the coffee shop is located in a shopping or business center, then the beginning and end of work coincide with the opening and closing of the center (for example, from 10:00 to 22:00), and then the duration of the shift is 12 hours.

In addition to the rate, you can motivate the barista with a share of sales within 2-3% if the plan is met and all work instructions are followed.

How to open coffee to go from scratch. Financial plan

Concerning investment, then opening a take-away coffee shop is considered a business with little investment. If you choose the most budget options with inexpensive rent and used equipment, then you can meet UAH 100,000 (250,000 rubles), and the maximum is unlikely to be higher than UAH 180,000 (400,000 rubles).

* The cost of rent in shopping centers of large cities in Ukraine and Russia starts from 1000 UAH (2500 rubles) and goes up to 5000 UAH (13 000 rubles) per square meter. The price depends on the location of the shopping center itself, its class and the location of the point inside the shopping center. The average area of a coffee shop is 10 square meters. m.

** The list of purchased equipment includes: bar counter, refrigerator, coffee grinder, water filters, disposable tableware. The volume of purchased coffee depends on the traffic of the place.

Calculation of the cost of coffee to go

Consider the calculation of the cost on the example of a cup of Americano. As we said at the very beginning, at a price of 400 UAH (1000 rubles) per kilogram of coffee, about 120 servings can be made from this raw material - 3 UAH (8 rubles) for each. We also include here the cost of a glass with a lid, a stirrer and sugar - as a result, the cost of the drink will be approximately 7 UAH (18 rubles).

income per day

In the example, we calculate the average income of a take-away coffee outlet based on the average ticket amount and the number of purchases.

Monthly income

To increase profit, you need to increase the average check. Your barista can do this, the main thing is to properly motivate him. We need to sell more desserts, snacks, drink toppings, and encourage customers to order larger drinks.

The number of purchases also needs to be increased, but it is more difficult to do this: here it is already necessary to seriously work on the brand and recognition of your outlets with coffee to go.

It is very important to quickly serve the client: take the order, calculate and serve the drink. If the speed of preparing drinks depends only on the skills of the barista, then everything else can be greatly accelerated if an automation system is installed. For example, to use Poster POS, you will need an ordinary tablet that can easily fit on a stand. A barista places an order with a couple of touches on the screen, prints a receipt for the buyer, and the owner immediately sees this sale on the screen of his smartphone or laptop browser.

Payback point with coffee to go

The cost of drinks - 30-40%.

Profitability of sales - 22%.

Initial investment - UAH 105,000 (267,500 rubles)

Break even - from 2 to 4 months.

Return on investment - from 9 to 12 months.

Risks when opening coffee to go

What are the advantages and disadvantages of such a business? The success of the coffee-to-go business depends most of all on the location of the outlet. A big risk to business profitability is a decrease in traffic. For example, if your coffee shop is located in a shopping center, then the decline could be:

    during the holiday season (summer is a rather difficult period for the coffee business: at this time, people prefer to go to nature, to the sea, abroad, and not to walk around shopping centers);

    during the holidays (the basis of the target audience is students);

    during a crisis in the economy, exchange rate fluctuations, etc. (when the purchasing power of people falls, they less often go to shopping centers for non-essential products).

If your point is located at the entrance to the subway or at a stop, then the traffic depends primarily on the weather. Daily revenue will decrease during snow, rain and severe frosts. People are in a hurry to take shelter from the weather, and not stand at the kiosk waiting for coffee. There is also a decline in the summer period, but profits at this time can be increased in other ways, which we have already described in the article.

Results

"Coffee to go" or a mini-coffee shop is a profitable business, but you should not count on excess profits. On average, the monthly income from one point rarely exceeds 40,000 UAH (100,000 rubles), and most often it is 20,000–30,000 UAH (40,000–80,000 rubles). It is very good if in the first month you can go to zero, but in the future, with the expansion of the assortment and promotion of the outlet itself, increasing awareness, you can reach a more worthy profit of 80,000 UAH (140,000 rubles).

Despite the fact that the cost of a cup of coffee is 30-40% of the sale price, the profitability still remains at about 20%. Part of the revenue goes to renting a good place, but thanks to this, you can earn more, so you should not cut costs here.

The first 30-60 cups of coffee sold per day pay off the cost of rent and consumables. And only the following sales will already bring 60-70% of the profit.

To earn more, the owners of "coffee to go" open several points in different parts of the city- firstly, to increase your income and increase brand awareness, and secondly, to compensate for sales declines in different locations. For example, a point in a shopping center brings a stable income on weekends, but shows a rather low efficiency on weekdays, but with a point in a business center, the opposite is true.

Do not forget about the loyalty of your customers: encourage constant purchases, hold promotions: “The fifth coffee as a gift”, “Free waffle with a large cappuccino”, etc.
